Applying his classical French training and technique to New Zealand’s distinctive, fresh, seasonal and artisan produce, Sean Marshall’s food while ingredient driven, is an exercise in refinement and restraint with an emphasis on flavour, balance and texture.

The core values represented in his cooking are those of honesty, integrity and a distinct lack of pretence. These values are supported by a high level of respect for great produce and ingredients and a belief in the importance of careful and rigorous preparation.

Sean’s dishes are typically unfussy with no unnecessary garnishing or superfluous ingredients and at times their apparent simplicity belies the extraordinary attention to detail in the design of the dish and the cooking process.
